AC NOT WORKING CORRECTLY

I HAVE A 2006 JETTA TDI WITH A 5 SPEED MAN. TRANS. MY AC STOPPED WORKING, BOTH FANS APPEAR TO BE WORKING. I TOOK IT TO VW AND THEY TOLD ME BAD COMPRESSOR. WE PUT ON A NEW COMPRESS AND DRYER. HOLDING CHARGE OF 134A, HIGH PRESSURES OF 220 AND LOW OF 45. HERE COMES THE PART I DO NOT UNDERSTAND. MY AMBIENT TEMP SENSOR WAS READING WRONG NUMBERS AND THE AC WOULDN'T COOL. I DISCONNECTED THE SENSOR AND THE SYSTEM IMMEDIATELY COOLS OFF. OF COURSE THE RECIRCULATE SYSTEM DOESN'T WORK WITHOUT THE AMBIENT TEMP SENS. CONNECTED. I ORDERED A NEW SENSOR AND NOW THE READINGS ON THE DIGITAL DASH SHOW THE CORRECT OUTSIDE TEMP BUT THE SYSTEM WILL NOT COOL DOWN UNTILL I HAVE DRIVEN 8 TO 10 MILES AND THEN IT WORKS. IF I SIT AT IDLE IT SEAMS LIKE IT NEVER COOLS OFF WITH THE AMBIENT TEMP SENSOR CONNECTED. A FEW TIMES IF I IDLE 20 MIN OR MORE IT WILL COOL BUT IT IS SPORADIC. IF I DISCONNECT THE AMBIENT TEMP SENSOR THE SYSTEM IMMEDIATELY COOLS OFF AGAIN, EVEN JUST AT IDLE. ANY THOUGHTS WOULD BE GREATLY APPRECIATED. THE DASH AC CONTROLS ARE ANALOG NOT THE DIGITAL. THE COMPRESSOR APPEARS TO BE RUNNING, THE CLUTCH IS NOT CYCLING OFF.
