How difficult is adjusting the driver's side door on a Passat?
Mine sags about 1", which is about at the maximum tolerance of the latch meeting the catch on the door post. When closing the door the upper edge of the latch collides with the catch with a thud. Any more sag and the door could become difficult to close.
The attached photos show the extent of the sag.
The Bentley Service Manual isn't very clear on the topic and looking at the hinges I don't see any obvious adjustment.
Is this a job better left to a body shop?

Look at the top hinge when you open the door. There is a set screw there that backs out. When it backs out the door sags. Tighten that set screw - I believe it is either 4mm or 5mm. That may solve your problem.
If you really do need to adjust the hinges, it takes a bit of work. Half of the bolts can be accessed when you open the door, the other half are on the inside behind the fuse box. Not fun...
