No speaker diameters

I'd like to buy speakers to fit the Dynaudio spots (I currently just have the standard speaks) and then have them installed professionally.

I bought the Bentley DVD figuring it would have all the specs I need... but Noooooooo!

Where can I get the info I need?

Seems like you went to the wrong place first. If you need new speakers vw will tell you to go to the dealer and buy their upgrade so it make "cents" to me that they won't give you any specs. try a specialist like crutchfield:

Duh, I've been to Crutchfield, and amazingly, they say any number os speaker diameters will fit my Eos. Do you think, much like the "dealer" in your post, they'd like to make a sale?
If you've got a computer in that mouse hole, impress me by finding the info and posting it here (it ain't out there).
There was no way of knowing if the Bentley DVD would have the information before I bought it. But I don't feel I was crazy to think that a disc that promises "repair procedures to Diagnostic Trouble Codes, eBahnŽ Desktop repair manuals enable its users to easily access service and repair information that vehicle manufacturers supply to their dealer technicicans (sic)." might have the info I seek.

Pioneer fit guide claims the EOS woofers are 6.5" diam here and tweets are 1"

My after market audio guy claims that the woofers are 8", but only a very few replacement speakers are shallow enough to fit the doors.

I'll find out more next week as we will be in the doors playing with a crossover circuit. The stock speakers sound great when we applied Dynamat in the doors, better use of money in my opinion then replacing the actual drivers.

I agree with Lash LaRue, I am pretty adept at the Google thing and I have found virtually no information on the topic. So I will try and contribute in a few weeks...
